Garage Beer Co. Mosaic Face Off DIPA

It’s been a while since we brewed up some single hop beers but we felt we had the tools to brew up our best single hop DIPA’s ever so we thought, why wait? To get the fullest expression of these varieties we have used 4 different formats of each hop and dry hopped at 3 distinct stages. The formats are Spectrum, Cryo, T90 and BBC pellets. All offer different profiles which come together to create a harmonious, juicy character. Spectrum is a new liquified dry hop developed by Barth Haas which cuts down on the polyphenol contribution from the hops, therefore resulting in a smoother beer for the same level of hop intensity. Added at different stages it can present different characteristics. We have added it during active fermentation to induce biotransformation to get more overripe fruity notes and then again post fermentation for the more classic notes from these hops. Heavy doses of Cryo pellets post fermentation produces impactful top notes while two distinct types of pellets, T90 and BBC provide the deeper and softer fruit characteristics. We have pushed the oat content to higher levels than we typically do on these beers to really acentuate a soft, creamy body providing a delightfully moreish hoppy experience.
The Mosaic version pops with bright notes of mango, pineapple, slight herbal pine resin and that classic dank sweaty character that this hop is known for.
