THE BREWERY SAYS:
A collaboration with our friends at Balance Brewing and Blending – we brewed a batch of strong golden wort directly into neutral wine barrels along with both our house cultures and allowed this to ferment and mature for 16 months. The two barrels were then transferred onto 100kg of whole Scottish gooseberries which had undergone carbonic maceration. This traditional winemaking process helps break down the fruit and allows the creation of additional flavour compounds. The result is fresh and floral with intense gooseberry aromatics. Bottle conditioned, 386 bottles only.
