Trillium – Encoded IPA

THE BREWERY SAYS:

Innovation, sustainability, and quality are just a few of the values we share with Freestyle Hop Farms, located at the top of Te Tauihu (the South Island) of Aotearoa, New Zealand in Nelson’s iconic Moutere Valley. Freestyle’s cutting-edge hop breeding program, in partnership with Garage Project, is a great inspiration for us here at Trillium with new, exciting varieties that allow us to push boundaries in recipe development. From searching out intriguing advanced selections to intensive sensory analysis and trial brewing, The Freestyle team is dedicated to producing the most flavourful, unique, and intensely aromatic hops in the world.

Codename: Peacharine is one of the latest advanced hop selections from Freestyle’s breeding program, displaying a complex nectarine and citrus character with sweet fruit, lime zest, and tropical notes. To showcase this vibrant new hop variety while celebrating our 10th anniversary, we developed Encoded IPA.

Keeping an eye toward creative possibilities with Peacharine while retaining the core elements of what works best in Mosaic, the aroma is a stunning display of hop saturation. Juicy peach, ripe stone fruit, and zesty citrus notes are complemented by overripe pineapple, mango nectar, and grapefruit. Supremely soft and palate-coating with low bitterness, Encoded holds no secrets to blissful drinkability.
