Holy Goat – Scylla Black Barrel Aged Golden Sour with Blackberries, Red Gooseberries & Rhubarb

THE BREWERY SAYS:

A collaboration with our friends at Balance Brewing & Blending, this golden base beer was fermented in a white wine barrel previously inoculated with a mixed culture from Balance and Holy Goat. Given the uniqueness of this barrel in our cellar, we chose to fruit it as a follow-up to our original collaboration, Scylla.

After 20 months of oak ageing with the addition of 40L of rhubarb juice, the beer was refermented for a further two months on 220g/L of locally grown Scottish blackberries and red gooseberries before bottle conditioning. The result is bright, vinous and juicy, with notes of red fruit pastilles, currant compote and a gentle oak. Limited to 468 bottles.

Drink young or age, this will get weirder.
